Whether you are car camping or have a decked-out RV, you never want to miss out on gathering around a campfire for s’mores and music. And, if you are planning to do a lot of cooking over the flames, it’s always good to have some recipes on hand. Here are 5 easy campfire meals that you need to try the next time you head out into the great outdoors! Be sure to plan and prep these meals ahead of time!
1. Campfire Nachos
Ingredients:
- Tortilla chips
- Shredded cheese
- Salsa
- Refried beans
- Ground beef (optional)
Instructions:
Preheat your campfire. Spread out a layer of tortilla chips on a large, heat-resistant plate or bowl. Top with shredded cheese and salsa. Add a layer of refried beans, and then top with another layer of tortilla chips, cheese, and salsa. If desired, add ground beef to the top. Place the plate or bowl on the edge of the campfire to warm and melt the cheese.
2. Redneck Chilli
Ingredients:
- Your choice of a personal bag of chips (Doritos or Fritos are best)
- Can of chili of your choice (the most popular is chili con carne)
- Shredded cheese
- Sour cream
- Chopped lettuce
- Chopped tomatoes
Instructions:
Pour the chili into a saucepan or skillet and warm over a fire. When it has warmed up, open your personal bag of chips and pour chili into the bag. Top it off with cheese, sour cream, lettuce, and tomatoes (all up to you!), and eat it out of the bag with a fork!
3. Tinfoil Pizzas
Ingredients:
- Aluminum foil
- Pita bread
- Marinara Sauce
- Shredded mozzarella cheese
- Pepperoni
- Additional pizza toppings (optional)
Instructions:
Place a piece of pita bread on a large piece of aluminum foil. Curl or fold up the edges to create a make-shift plate. Assemble your pizza with marinara sauce first, then sprinkle cheese, pepperoni, and any of your favorite pizza toppings. Place your pizza on a grill over a campfire, until the cheese is melted or is slightly brown.
4. Grilled Cheese Sandwiches
Ingredients:
- Bread
- Butter or margarine
- Cheese slices
Instructions:
Butter one side of each slice of bread. Place the slices of bread, butter-side down, on a skillet on a grill over the campfire. Top one slice of bread with a slice of cheese, and place the other slice of bread, butter side up, on top to make a sandwich. Grill the sandwich until the bread is toasted and the cheese is melted.
5. Bacon Ranch Potatoes
Ingredients:
- 4 large potatoes
- 1 package of bacon
- Shredded cheese
- 1 bottle of ranch dressing
- Parsley or seasoning of choice
Instructions:
Wash and slice the potatoes into thin wedges. Wrap each potato wedge in a piece of bacon and secure with a toothpick. Grill the potatoes over the campfire, flipping occasionally, until the bacon is crispy. Sprinkle with cheese and parsley, and top with ranch dressing.
